Bitter Salad Greens with Spiced Pear Paste Dressing

INGREDIENTS

  • 1 white witlof
  • 1 Cos Lettuce
  • 1 bunch Rocket
  • To taste Sea Salt
  • 20g Parmesan
  • 50g Walnut

Wash and spin salad greens to dry.

For dressing, place the Verjuice and Spiced Pear Paste into a small saucepan and place over a low heat. Once all the Spiced Pear Paste has melted, allow to cool and add the Extra Virgin Olive Oil. Season to taste before using.

Place all greens into a bowl and dress with only enough dressing to coat the leaves.

Finish with shaved parmigiano reggiano and walnuts.
