Brown Sugar and Butter Baked Peaches

Preheat a fan forced oven to 220C. Cut each peach into quarters, remove the stone and discard. Place the peaches into a 30cm x 20cm baking tray, then sprinkle with sugar and the butter.

Place into the preheated oven and cook for 10 minutes, then drizzle over the Verjuice and cook for another 5 minutes or until caramelized and soft, but still holding their shape. Remove from the oven and set aside to cool. Serve warm or at room temperature.

Maggie's tip: these baked peaches are delicious served with cream or atop ice cream or my Basic Bircher Muesli.
