Apple Aioli
INGREDIENTS
- 1 Granny smith apple
- 2 Egg yolks
- 1 clove Garlic
- 3/4 cup Grapeseed Oil
- To taste Freshly ground black pepper
- To taste Salt flakes
Peel and grate the apple and immediately soak in Verjuice.
Process the yolks in a food processor with the garlic, grated apple and Verjuice. While processing, firstly add the Extra Virgin Olive Oil in drops for the beginning third and then in a thin stream and the last third more rapidly, until emulsified. Then add the grape seed oil in the same way until completely emulsified.
Check for seasoning and possibly add an extra squeeze of lemon juice.
