Spiced Pear Marinated Pork Spare Ribs
Melt the Spiced Pear Paste in the Verjuice either in the microwave or in a saucepan over low heat.
Allow the emulsified paste to cool slightly and then add the chopped thyme to complete the marinade.
Place pork ribs in the marinade, working the mixture all over the meat before leaving in the fridge for at least 2 hours or overnight.
Remove the meat from the fridge and allow it to come up to room temperature.
Heat barbecue to medium-high temperature. Brush grill with an oiled brush before placing ribs on heat, and cook until the first side is caramelised. Brush occasionally with extra marinade and cook for 2-3 minutes, depending on thickness of meat. Turn ribs and cook as per the first side.
Serve with a fresh salad of bitter greens.
