Creamy Bircher Muesli with Apricots and Currants

INGREDIENTS

  • 2 cups Full cream Greek yoghurt
  • Pinch of Ground cinnamon
  • Pinch of Ground cinnamon
  • 4 Fresh apricots
  • To serve Extra honey
  • To serve Extra honey

  • Place the oats into a large mixing bowl, then add the yoghurt, milk, Verjuice, cinnamon and honey and mix together until well combined. Cover and place in the fridge overnight. Place the currants into a small bowl and pour over the Verjuice. Cover and leave overnight to soak.

  • The next morning, give the muesli a good stir and divide into 4 serving bowls.

  • Cut the apricots in half, remove and discard the stone. Tear the apricots into pieces and place over the top of the bircher along with the soaked currants.

  • Drizzle over honey and serve.
