Oysters with Eschallotes and Verjuice

INGREDIENTS

  • 1 tbspn Chervil
  • 6 Freshly shucked oysters
  • 2 Eschallotes

Add the chopped eschallotes to a bowl with the Verjuice and let sit for 10 minutes to amalgamate the flavours.

Spoon onto the freshly chucked oysters, add chervil and serve.

Maggie”s Tip: To keep unopened oysters fresh, when you get them home, wrap them in wet hessian, or a tea towel. Don’t keep them too cold and you can keep them fresh for a number of days. An hour before you want the oysters, add them to a bowl of cold water. This cleans away some of the shell grit.
