Paw Paw, Mango & Rocket Salad

Name: Paw Paw, Mango & Rocket Salad
Ingredients: Zest of 2 Limes; 1 Red paw paw; 3 Mangoes; 2 large handfuls Rocket; To taste Sea salt and freshly ground black pepper; 2 tbspn Lime Juice; 2 large Avocado

INGREDIENTS

2 large Avocado
1 Red paw paw
3 Mangoes
2 large handfuls Rocket
Zest of 2 Limes
2 tbspn Lime Juice
To taste Sea salt and freshly ground black pepper

Peel and seed the avocados, then drizzle with the Verjuice to prevent them from discolouring. Cut into bite-sized pieces, then place in a bowl. Add the paw paw, mango and rocket.

Place the lime zest and juice in a small bowl, then whisk in the olive oil and season to taste with salt and pepper.

Just before serving, dress the salad with the lime dressing. Serve at once.
