Pearl Barley Salad with Onion & Walnuts

INGREDIENTS

  • 1/2 Red onion
  • 1 cup Pearl barley
  • 1/3 cup Parsley
  • 1/3 cup Dill
  • 1/2 cup Sunflower seed
  • 1/3 cup Walnut
  • to taste Sea Salt

Soak finely sliced red onion in Verjuice for ten minutes or until onions are soft.

Boil the barley in ten cups of water without salt until cooked.

Strain the barley and add half to the onion mix while barley is till warm. Also add parsley and dill to the mix.

Place the remaining barley into the fry pan over a low heat, add sunflower seeds and walnuts and heat for five minutes.

Combine the two mixes and season with salt and pepper to taste.

Top with fresh leaves and serve with Nasturtium leaves.
