Poached Apricots with Butter and Brown Sugar

INGREDIENTS

  • 4 Whole apricots
  • 1 tbspn Unsalted butter
  • 1 tbspn Brown sugar
  • To serve Runny cream or ice cream

Place a piece of baking paper on to a ceramic plate.

Cut the apricots in half and place cut side up onto the plate.

Melt the butter and brown sugar in a microwave safe dish, then brush over each apricot.

Place the plate of apricots into a microwave and cook on a medium high setting for 2 minutes.

Remove from the microwave, place on to a serving plate, pour over the juices, butter and sugar syrup, and serve with runny cream or ice cream.
