Tomato Bruschetta

INGREDIENTS

  • 6 Sour dough bread
  • 3 Garlic Clove
  • 24 Cherry Tomatoes
  • 120g Feta
  • 1 pinch Salt
  • 1 pinch Pepper
  • 24 Basil leaves

Thickly slice the sourdough bread and toast both sides in a grill pan on the stove top or on a BBQ.

Whilst hot, rub cut garlic clove over the toast, then coat with Extra Virgin Olive Oil.

Place fresh tomato over the toast, add feta and freshly cracked salt and pepper to taste.

Finally, top with fresh basil leaves and drizzle with Extra Virgin Olive Oil.
